fast and furious.

so it’s beginning to sink in how soon a mid July opening is. but things are steadily moving along through this exciting(stressful) process. so the space was previously occupied by a french woman whom created a mini bar for her friends to hang out in and she lived in the adjacent room. apparently she also held some mini art galleries from time to time in her 3 years of residence. so the immediate plan is the start ripping out all the flooring so we can lay out some new water piping as well as re-cement all the floors. knock down the make-shift brick bar she installed. knock down a wall to the bathroom. and rip out the ceilings to expose the wood beam frame. so here’s a rough timeline so far.

signed the official lease papers yesterday. got the keys.

the year’s rent just got wire transferred today. took measurements of the space.

tomorrow, searching for importer for cerveza and tequila.

owner will officially be out of the space by sunday.

gutting the space begins on monday or tuesday, should be done in 4-6 days.

begin sketching out the design end of next week.

hire a cook starting june 1st to start helping with standardizing recipes and costing.

hire consultant to start cocktail tastings, menu/bar design.

this is all i’ve got/can manage for the next 2-3 weeks until the drawings get finalized and we begin purchasing furniture, equipment, smallwares, etc. 

it’s day 3 since this has began and i haven’t freaked out yet, so i guess that’s good. but we’ll see how long i can hold out before my mind completely shuts down.

don’t wish me luck. that won’t help. send me tequila. i’ll need lots.

whenever i see pre fried food behind a window i’m always reminded of england and the fish and chip shops. such a turn off. but these things didn’t sit for more than 5 minutes before being ordered. they kept bringing in fresh batches. the placed just turned tables like a pro. the fish fillets were grand. crispy and cleverly sweet and salty batter. topped with mayonnaise, diced tomato, and avocado. stunning.

coctel. this was spot on. i think the best shrimp ceviche i’ve had. the base was thicker than usual. they also dropped in some fresh clams with the juice. shrimp was only about 75 percent cooked. perfect.
